Thai Vegetarian Pomelo Salad

Ingredients
For the dressing
1/3 cup of desiccated coconut
1 shallots
1 medium clove of garlic
1 thai red chilli
2 tablespoons tamarind concentrate
2 tablespoons of brown sugar
2 tablespoons lime juice
2 tablespoons soy sauce
¼ cup chopped peanuts
For the salad
2-3 cups of pomelo pieces
1 shallot (thinly sliced)
1 medium clove of garlic (thinly sliced)
Mint leaves (optional)
Instructions
1. Dry roast the coconut in small pan (until slightly browned), set aside
2. Dry roast the peanuts and set aside
3. Grind together the shallot, garlic, red chilli into a smooth paste
4. In a pan add the tamarind, sugar lime juice, soy sauce and paste from step 3 and let simmer until all the sugar dissolves. Set the dressing aside to cool down
5. Fry the shallot and garlic slices in some hot oil until crisp and set aside
6. Assemble the salad by adding the pomelo, dressing, coconut and peanuts and mix together (with hands is best!)
7. Top with the crispy shallots, garlic, extra red chilli and mint slices and serve
