Sweet and Sour Tofu

Crispy tofu and stir fried veggies in a sweet and tangy pineapple sauce.

Servings: 3-4
Ingredients
Tofu
1 block (16oz or 450g) of firm tofu, pressed to remove water and cut into cubes
1 tablespoon soy sauce
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup cornstarch
1/4 cup oil for frying
Sweet and Sour Sauce
½ cup fresh pineapple chunks
¼ cup tomato ketchup
1 tablespoon of sugar (adjust the quantity according the sweetness of the pineapple, I added half a tablespoon to begin with and then increased)
¼ cup rice vinegar
1-2 tablespoons soy sauce
1 medium garlic clove
For stir fry
1 medium sized white onion thinly sliced
1 red bell pepper cut into chunks
½ cup fresh pineapple chunks
Steps
1. Add the tofu chunks to a bowl along with the soy sauce, salt, pepper and garlic powder. Gently toss the tofu to ensure it is fully covered. Then add the corn starch and toss again to make sure all the tofu pieced are covered.
2. Heat the oil in a wok or pan, once hot add the tofu and fry on all sides until it is golden and crispy all over. Remove the tofu from the pan and set aside on plate lined with tissue paper. Keep the pan for the stir fry.
3. Add the sauce ingredients to a food processor and blitz until you have a sauce
4. Heat the remaining oil in the pan you used for the tofu. Add onions and fry until they are soft and translucent.
5. Add the bell peppers and pineapples and fry for a few more minutes until the pineapples are slightly charred.
6. Pour the sauce over the vegetables and heat until it starts to boil then reduce the heat and let it simmer until it starts to thicken.
7. Add in the tofu, and stir until fully combined in the sauce. Remove from heat.
8. Top with sesame seeds and chopped spring onions and serve with hot rice
