Fridge Raid Pesto!

I love making my own pesto at home and mixing in different veggies and nuts. Pea pesto is a favourite but wanted to use up some spinach so threw it in there too!

Ingredients
1 - 1 and 1/2 cups of frozen peas (defrosted and cooked as per instructions)
1 and 1/2 cups baby spinach (blanched)
2-3 medium sized cloves of garlic
1/4 cup fresh basil
1/4 cup fresh parsley
1 teaspoon oregano (fresh or dried)
4-5 tablespoons of olive oil
6-7 walnuts (increase the quantity to make it more creamy)
2-3 tablespoons of parmesan cheese
2 tablespoons of lemon juice
Salt to taste
Black pepper to taste
Steps
1. Add all the ingredients to the food processor and blitz until you get a smooth paste. If the mixture is too dry, add some water (no more then a tablespoon at a a time) until you get the desired consistency.
2. Stir in with some pasta or spread on top of some toast and enjoy!
